Preparing Your "Fire"

We are going to cover a lot of different ways to cook your roast. Do not be alarmed! We are just being us and giving more info than is needed. All of these preparations will vary a little. Our commercial deck oven at 350°F may be different than your gas oven at 350°F. So, a good thermometer, especially a internal probe that you can see the temp without opening the oven is best. Same with smokers, a probe is always best. And always make sure you are having a great time while cooking. The one main thing we ask is that you be careful when cooking. Always keep a fire extinguisher handy (We have a system that sprays the whole kitchen, Your home does not). Fire is hot and Knives are sharp, lets remember that.

 

Gas Oven

               We are going to do this one 2 ways. Or 1. Dealers Choice.

Method 1 “Reverse Sear”  

               Set Oven Temp to 450°F

               Place Roat On Roasting Rack

               When oven is ready, set roast in and set timer 20 minutes.

               After 20 Minutes (Or Well Browned On Top), reduce oven temperature to 325°F

               Cook Until Desired Teperature

 

Method 2

               Place Large Pan On Oven & Add Oil (Cast Iron Preferred)

               Set Oven to 325°F

                              Sear Roast On All Sides Until Well Browned

                              Set Aside On Roasting Rack

               When Oven Is At Temperature Place Roast In and cook until desired temperature

 

Electric – We Do Not Recommend Searing First with Electric Elements, Long Slow Roast Is

                        Preferred (The Roast will accumulate a lot of fat that can catch fire, Also its hard to find cast                           iron that large.)

               Set Oven To 350°F

               Place Roast On Roasting Rack

               Place Roast In & Cook Until Desired Temperature

 

 

Open Fire – For Only The Brave & Those Who Know

               Step 1)  Build Your Fire And Let It Get To Coals

               Step 2) Feed Your Fire On One Side & Place Roast Bone Side to The Fire on cold side

               Step 3) Keep Adjusting, Feeding Your Fire, & Rotating

               Step 4) When Desired Temp Is Reached, Put Over Open Flame to Crust & Sear

 

Smoker (Pellet/Gravity)

               Set Up Smoker as Normal

               Set Temperature to 325°F & Let it Get Up To Temp

               Smoke 5 Hours Or Until Desired Temperature Is Reached

Cooking imes - to Medium Rare/Medium

-2 hours 2 bone*

-4 hours 4 bone*

-6 hours full rack*

-Approximate times* Always Use A Thermometer (Method & Environment will determine the cook time)
